Once you’ve tasted homemade ‘túrós csusza’ with crunchy bacon bits, you’ll never go back to the store-bought pasta version. The original dish is made with freshly rolled dough, and it’s finished off with a generous dollop of rich sour cream. Preparing the homemade pasta isn’t hard work, and the delicious result more than rewards the effort.
Ingredients for 4 servings
For the pasta:
- 400g flour
- 4 eggs
- 2 large pinches of salt
- Oil
For the topping:
- 500g cottage cheese
- 250g bacon with meat
- 400ml sour cream
- Parsley or dill (optional)

Preparation:
- Sift the flour onto a board and sprinkle it with salt. Use your fingers to make a well in the center, crack the eggs into it, and crumble them into the flour. Knead everything into a smooth, uniform dough. If it’s difficult to bring together, carefully add a few drops of water. Cover the dough and let it rest for 30 minutes.
- Once the resting time is up, divide the dough into two parts and roll them out on a floured surface until they are as thin as matchsticks. Lay the two sheets on a clean kitchen towel and let them dry for another 30 minutes until the surface is no longer sticky. Then, cut them into squares using a sharp knife. Cook the pasta in boiling salted water for about five minutes. When done, drain the pasta.
- In the same pot used for cooking the pasta, heat a small amount of oil and toss the cooked pasta in it for about 30 seconds. Cut the bacon into small cubes and render the fat in a dry pot or pan. Mash the cottage cheese with a fork, mix it with the sour cream, and, if desired, add finely chopped dill or parsley. Combine the sour cream and cottage cheese mixture with the pasta, and stir in the fried bacon cubes.
