The zucchini fritter can be a great snack on its own, especially when paired with a dipping sauce. However, if you’d like, you can turn it into a main dish by serving it with any side you prefer. - 1 medium-sized zucchini
- 2 eggs
- 2 cloves of garlic
- 1 bunch of parsley
- 100g grated cheese
- Bread crumbs
- Wash the zucchini, grate or finely shred it, and then sprinkle some salt over it. Set it aside for about 10-15 minutes and then squeeze out the excess liquid.
- Mix the zucchini with the eggs, crushed garlic, and finely chopped parsley.
- Add the grated cheese and enough bread crumbs to make the mixture moldable. Season with salt according to your taste.
- Shape the mixture into balls or patties, then fry the zucchini fritters in plenty of oil until they are golden brown.
