Ingredients
- 350 g (12 oz) Pork Collar or Blade
- 125 g (4.5 oz) Bacon
- 75 g (1/2 Cup) Onion
- 3 Cloves Garlic
- 1-2 Tsp Black Pepper
- Salt to Taste
- 250 ml (1 Cup) Water
- 45g (3 Tbsp) Sour Cream
- 1 Tbsp Flour
Instructions
- Cut the bacon into batons 5mm in profile and 2.5-3cm long.
- Cook the bacon in a frying pan over medium-high heat for 5-6 minutes.
- Dice the onion into 5mm pieces.
- Finely chop the garlic.
- Add the onion to the pan with the bacon and cook for 5 minutes.
- Cut the pork into 1.5cm thick and 4-5cm long pieces.
- Add the garlic to the pan and cook for 1 minute.
- Season the pork generously with salt and add it to the pan.
- Increase the heat and fry the pork for 5 minutes.
- Pour in water, add the pepper, and reduce the heat to medium-low.
- Stir well, cover with a lid, and cook for 45 minutes.
- Combine the sour cream and flour together.
- Stir the sour cream mixture into the sauce and cook for an additional 3-4 minutes to thicken the sauce.
